Red Lentil, Sweet Potato and Carrot soup with Coconut

Ingredients:

  • 2 cups washed red lentils
  • 1 tbsp butter or ghee
  • 1 onion, finely chopped
  • 3 Celery stalks
  • 2 large carrots, chopped
  • 1 tsp turmeric
  • 1 tsp cumin
  • dash of cinnamon
  • 1 tbsp salt
  • 1\2 tsp cracked black peppercorns
  • 6 cups broth
  • 1 can coconut milk
  • Finely chopped cilantro

In a frying pan, melt butter or ghee and add carrots, onions, sweet potatoes and celery, cooking until soft. Add spices and cook for another minute. Stir in lentils and stock and cook at a medium temperature for 20-30 minutes, or until everything is cooked through. Add a can of full fat coconut milk at the end of cooking. Spoon into bowls and top with cilantro. Enjoy!
